Hearty Bean-less Keto Chili

Hearty meals are in season! Try our bean-less chili for a low-carb autumn treat. While it is possible to simply add all items to the crockpot and just wait, we highly recommend first browning the ground beef and sautéing the onions. It adds so much flavor, you really won't want to skip these steps.


INGREDIENTS

Main
  • 2 lbs ground beef
  • 1/2 onion, finely diced
  • 1 bell pepper, diced
  • 14.5 oz can diced tomatoes
  • 10 oz can Rotel Hot Diced Tomatoes with Habaneros
  • 6 oz can tomato paste
  • 4 oz can green chilies
  • 14.5 oz can beef broth
  • 1 tsp cumin powder
  • 3/4 tsp chili powder
  • 1 tsp oregano
  • 1 tsp garlic salt
  • 1 tsp black pepper
Optional Toppings**
  • shredded cheddar cheese
  • sour cream
  • avocado, cubed

INSTRUCTIONS

  1. In a large dutch oven, cook the ground beef over medium-high heat until just brown on the outside. Drain the grease and add beef to the crockpot.
  2. With a little beef fat remaining in the pan, sauté onions over medium-high heat until translucent, about 5 to 7 minutes.
  3. Add onions and all other main ingredients to the crockpot and give them a good stir.
  4. Simmer on high for 3 to 4 hours, then enjoy with your favorite toppings.
