Crunchy Keto Crackers

For a crispy, crunchy keto cracker, the secret is in the wrap! These savory crackers pair well with cheese and hard salami. We have tried many different commercial flatbreads and Joseph's Flax Oat Bran & Whole Wheat Lavash Bread is our hands-down favorite. Generally speaking we avoid grains, but this product line is an exception. Their pitas are great for making pita chips that will stand up to a heavy dip. Net carbs for the chips come in slightly higher at 5 grams per pita.


INGREDIENTS

Savory
  • 1 sheet of lavash bread or 2 pitas
  • olive oil cooking spray
  • garlic salt
  • freshly cracked peppercorns

INSTRUCTIONS

  1. Preheat oven to 375 degrees.
  2. For pita chips, cut the pitas in half, then cut apart the two sides from the inside. We do this with a pizza cutter.
  3. On parchment paper, spray the bread, then sprinkle with garlic salt and pepper. Flip over and repeat.
  4. Use a pizza cutter to divide the lavash bread into small crackers, approximately 8 x 10 rows. If making pita chips, stack the pieces and cut into 3 triangles. Spread the triangles onto the parchment so that there is no overlapping.
  5. Carefully transfer the parchment sheet to a cookie sheet.
  6. Bake 4 minutes, then turn the pan 180 degrees and bake 3 more minutes.
  7. Allow crackers a few minutes to cool slightly. They will continue to crisp up as they approach room temperature.
